Italian honey obtained from the evergreen plant of Eucalyptus. Characterized by a rather dense and compact texture and an amber colouration, it tends to crystallize rapidly. The taste is persistent, strong, intense, particularly balsamic and not too sweet. It goes very well with aged cheeses and sweet and sour sauces.
